From 19 to 21 March 2026, indulge in an intimate six-course tasting dinner that celebrates fresh, locally sourced Philippine ingredients through a refined, vegetable-forward approach. Each course is thoughtfully balanced with select premium proteins and subtle global influences—an expression of Oan Tafel’s signature culinary philosophy. Recognized by Michelin and internationally awarded, Oan Tafel is known for its warm, interactive dining style and strong commitment to sustainability.

Meet the Chefs

Geert-Jan Vaartjes
Chef-Owner, Oan Tafel & Grand Café JAN!

Geert-Jan Vaartjes brings a wealth of global experience to the table, shaped by years of working and traveling across the world. Flavors inspired by the curries of Mauritius or the pho of Saigon are reimagined in Wergea, crafted using as many local Frisian ingredients as possible.

His career includes time in world-class kitchens such as the three-Michelin-starred De Librije in Zwolle, the two-Michelin-starred La Rive at the Amstel Hotel in Amsterdam, and De Bokkedoorns in Overveen. After seven years as Head Chef at De Heeren van Harinxma in Beetsterzwaag, he went on to serve as Executive Chef at luxury resorts in Mauritius and Vietnam before returning to Friesland in late 2021. Today, he leads Oan Tafel and Grand Café JAN! as owner and chef.
